Job Description

The Executive Sous Chef is responsible for directing the food preparation, production, control and quality for all food outlets and banquet facilities at hotel as well as overseeing the day-to-day culinary operations. Specific duties include ensuring standards and procedures are consistently applied, in addition to coordinating activities with other departments in order to facilitate the achievement the hotel's goals. ESSENTIAL FUNCTIONS • Manage the human resources in the department in order to attract, retain and motivate the employees. Hire, train, develop, empower, coach and counsel, conduct performance and salary reviews, resolve problems, provide open communication vehicles, discipline and terminate, as appropriate. Ensure supervision and control of permanent staff and contractors are effective to ensure optimum performance, efficient and safe working procedures, meeting all legislative standards. • Identify training needs, plan for short and long term development program and train associates accordingly. • Responsible for maintaining quality of food products and ensuring consistency in food delivery and standards. • Responsible for enhancing the food products; make changes that respond to the marketplace and to guests’ needs, both present and anticipated. Use market research to develop new products. • Control labor and operating expenses through effective planning scheduling and manage operating expenses to minimize costs while all along providing excellent guest services. • Be responsible in budgeting, forecasting and financial planning of the department. • Be responsible that the food quality and delivery are up to the highest standards. • Work closely with the Engineering team and assure that all equipment is in well maintained order. • Actively support preparation of monthly F&B promotions and cooperate with the Marketing department to ensure relevant advertisement and marketing is in place. • Resolve customer complaints as appropriate to maintain a high level of customer satisfaction and quality. • Ensure compliance with Health and Safety laws in Spain • Participate in the GSS (Guest Experience Index) weekly and monthly analysis to identify factors for delights and factors for dissatisfaction and prepare action plan for improvement. • Develop with all concerned and implement a cost effective and personalized based amenities program. • Coordinate related F&B Kitchen preparations for Clifton Audit, LRA Audit etc. • Develop and facilitate smooth and clear ways of communication between F&B Kitchen and all other hotel departments. • Participate as a member of the Hotels Fire and Emergency Team as required; while enforcing the safety and security procedure among the B&F team. • Ensure that F&B Kitchen BOH areas are on brand. • Implement all policies and procedures and manage the operations of the division in a manner consistent manner to ensure a high level of quality and customer satisfaction. SUPPORTIVE FUNCTIONS In addition to performance of the essential functions, this position requires the performance of a combination of the following supportive functions within the hotel: • Participate in the development of short and long term financial and operational goods of the hotel. • Ensure that guest satisfaction is consistently obtained and maintained.

Requirements

- Minimum 5 years of combined kitchen experience. Minimum 2 years experience in a management position in one of a leading 5 star hotel chain in the same role. - European Union Working Permit is a must. - Ability to speak, read, write and understand the primary language(s) used in the workplace fluency in Spanish and/or Catalan is required; any other additional language skills are appreciated. - Culinary degree or diploma from a recognized institution. - Highly professional in appearance, character and conduct - Positive attitude and team spirit - Effective interpersonal skills, resourcefulness and creativity - Display passion for our guests and enthusiasm for the job - Ability to work under pressure
