Manage all aspects of the food production for banquets, restaurant, room service menus including food preparation according to the description. Prepare food items for customers using a quality predetermined method in a timely and consistent manner. Set up station with predetermined mise en place required to service all banquet functions. Practice sanitation and safety daily to ensure the total customer satisfaction. Have a working knowledge of how to prepare all Mother Sauces, as well as Basic Roasts, Seafood, Pork, Beef, Chicken and Poultry Dishes. Must be able to run a shift (breakfast, lunch, dinner, banquet) in the culinary operation in the absence of management or supervision. Must be able to answer basic food safety questions, including but not limited to cooking temperatures, cooling times and basic sanitation. Must be able to identify super foods and use them in a recipe. Other duties as assigned by Chef’s, leaders.
Certified Cook level or higher. Ability to obtain and/or maintain any government required licenses, certificates or permits. Flexible availability, PM, weekends, holidays.
